Ito ang pinakapaborito ko sa lahat ng luto.  Bata pa lamang ako ay nakagisnan ko na ang lutuing ito ng tatay ko.  Tuwing mayroong may birthday sa pamilya, mayroon bisita at lalong-lalo na pagkatapos dumaan ang malakas na bagyo.

Masarap ang “native na manok” sa lutuing ito.  Masarap lalo na kapag ‘sinagkotsa ito sa tanglad” bago ito lagyan ng gata at luyang dilaw.

Ate Bicolana ka ba, o Bisaya?”, ;aging tinatanong sa akin.  Bago kasi ako pumasok sa opisina, kailangang makapagluto muna ako ng ilang putahe.  Madaling araw kasi ako namamalengke 3:30.  Ang mga niluluto ko daw ay patok sa masa lagi lalo na iyong dinuguan. Swak na swak sa panlasa nila ang mga ma anghang na ulam.

Mga Sangkap:

1 kilo manok adobot cut

1 Sibuyas katamtaman ang laki

3 butil ng Bawang

1 piraso ng Laurel

1 piraso ng Tanglad

Luyang dilaw

Luya

Sili pangsigang or pamaksiw


Sili Labuyo

Sili pokingan o bell pepper

Paminta durog

1/4 Tasa Suka (datu)

1 kutsara Patis

Magic Sarap

1 tasa Gata (unang piga)

1 tasa Gata (pangalawang piga)

Optional : Papaya o dahon ng malunggay puede ihalo sa karne

Paraan ng Pagluluto:

  1. Igisa ang sibuyas, bawang at luya papulahin kunti
  2. Ilagay ang ang manok, patis paminta at laurel, hayaan ng 5 minuto na kumukulo at ilagay na rin ang tanglad at suka.  Takpan.
  3. Kapag tapos na itong pakuluan ng 5 minuto, ilagay ang pangalawang gata kasabay ang luyang dilaw na hiniwa-hiwa ng maliliit.  Hayaang kumulo ng mga  10 minuto.
  4. Puwede nang isabay ang papaya na hiniwa  ayon sa gusto mong sukat
  5. Kapag luto na, ilagay na ang panghuling gata, kasabay ng siling pamaksiw at siling labuyo (tantyahin lamang ang gusto mong anghang).
  6. Timplahin ng asin at magic sarap, ilagay ang bell pepper o siling pokingan.
  7. Pakuluan ng dahan dahan hanggang sa ito ay lumapot.  Mas masarap kapag lumabas ang sariling mantika ng niyog ng kunti.
  8. Ihain na mainit kasabay ng mainit din na kanin.
