Paano ba magluto ng pinakamasarap na Paksiw? Iyan ang madalas na tanong sa akin, dahil ang lutong Paksiw ko daw ay napakasarap. Hindi malansa at ang asim ay talagang nagbe-blend sa kanyang timpla ng mga pinaghalo-halong mga sangkap.

Ito ang luto na pinakamadaling gawin.  Pero hindi ninyo alam na kahit simpleng luto lamang ito, pero maituturing na isa sa masarap na putahe ng mga Pilipino; inihahain sa hapag kainan ng mga pamilyang mahirap o may kaya sa buhay man.  Ito rin ang ulam na masarap e-partner sa ginataang gulay, lalo na sa gating langka.

Pero, may tamang pamamaraan at mga tamang sangkap, para makapagluto ka ng napakasarap na paksiw.  At napatunayan ko ito sa mga sinasabi ng aming mga customer o kahit ng buong pamilya.


1 kilo Tilapia Batangas (dark color na tilapia)
1 piraso sibuyas na pula (malaking size)
6 na butil ng sibuyas (malaking size) hiwain ng maliliit
Luya (mas malaki sa size ng posporo) hiwain ng strip
½ kutsarita ng crack na paminta
1kutsara ng mantika (puwede gamitin ang natira na pinagpritohan ng manok o itlog,
O longganisa)
4piraso siling pamaksiw
2 1/2 tasa ng Datu Puti na suka
1 tasa ng tubig
¾ kutsara ng asin
Magic sarap o vetsin

Pamamaraan:

Linisin ang tilapia o kahit na anong isda na gustong i-paksiw.

Sa kawali ilagay ang sibuyas, luya, bawang, paminta (magtira ng kunti para ilagay sa ibabaw ng isda) asin, mantika at 2 piraso ng siling pamaksiw.

Ilagay ang isda sa ibabaw ng mga pinagsama-samang sangkap.

Kapag nailagay na ang isda, ilagay sa ibabaw nito ang itinabing sibuyas, luya, bawang at paminta.

Ilagay ang suka.

Takpan at pakuluan ng mga 5 minuto.

Ilagay ang natitirang siling pamaksiw at tubig.

Timplahan ng magic sarap o vetsin at takpan ulit at pakuluan ng 5 minuto.

Tips:

Puwede ninyo itong lagyan ng gulay tulad ng talong o ampalaya.  Ilagay ang mga nasabing gulay kasabay ng tubig at siling pamaksiw para hindi ma-over cooked ang mga gulay at mapanatili nito ang kulay na sariwa at hindi magkulay lanta na.

Ihain ito kasama ng mainit na kanin o di kaya ay sinangag.

Kapag mayroong natira, puwede ninyo itong lutuin ulit lagyan lamang ng gata ng niyog.
