Embutido (stuffed pork sausage) is a delicious meat dish that I enjoyed during special occasions growing up. Sometimes the raisins were too strong, but it was worth the risk to have the sweet taste of pork. The sweetness comes from the sauce, which includes tomato sauce, ketchup and liverwurst.
I made the sauce, but it’s not necessary. The embutido is tasty on it’s own. It does take some time to cook–I steamed the rolled-up pork for an hour–and if you don’t have a steamer, you might want to go out and get one. They are not expensive and if you make a few sausages, they are more likely to fit in one pot for steaming.
