The last time I made Arroz Caldo, it had chicken in it. It was fantastic! My pinsan suggested I make it again with tripe, so that’s what we did!
Like Arroz Caldo at Manok, this was a very easy dish to make. The only difference is that tripe is not the easiest to cook. My cousin had one way of boiling the tripe, and a cook (at the Filipino grocery store I go to) had a very different way of boiling tripe.
I found the tripe to be chewy–you’ll see in the video below that it took me a while to chew the tripe–but I still packed it for lunch during the work week. Ulam!
In the middle of cooking, my cousin and I ate ensaymada, which I really enjoyed! I want another one! Now!
