If you like Nilagang Manok, then you will like Pesang Manok. The two dishes are very similar. Pesang Manok has a very subtle flavor but it’s perfect for cooler months of the year which I am experiencing right now since I live in Los Angeles, unlike my parents who are in the Philippines. I’m so jealous of them! Luckily I get to see them–and cook for them!–when they visit in a few weeks!
Pesang Manok is a very easy dish to make. You will boil chicken, and you should choose chicken with bones because you want the flavor that comes from boiling the chicken with bones. You’ll be adding quite a few vegetables aside from an onion. You’ll add celery, potatoes, bok choy, green onions and cabbage. And don’t forget the peppercorns like I did!
