Ask someone who isn’t Filipino to name a Filipino dish they enjoy, and Adobo will be in the top three. Maybe because we make it all the time–it is pretty easy to make–or maybe because it’s delicious. Regardless, Adobo gets the attention that it deserves, and it recently got more attention by way of Chef Sheldon Simeon on Top Chef! Represent!
I finally made adobo, pork adobo, and it was awesome! I’m not sure if it’s the vinegar or the soy sauce that gives it such a rich flavor, but something is working very well! Take a look at my video below!
