The recipe calls for bass or cod, but I was told to use tilapia instead, and that worked well for the dish. You’ll also include vegetables, such as: cabbage, bok choy, and green onions. The flavor comes from ginger, lemon juice and patis, the latter two of which you will use as a dipping sauce.
Below you’ll find a video of my first time making Pesa. I cooked the fish too long–in an effort to make sure the vegetables were cooked–and the fish disintegrated! Oops!
